A tray bake is a great way to make a 1 pot meal in the oven (rather than on the hob) and getting a mix of veg into you. This one has Bansley Chops as the main protien, but these can be swapped for pretty much any other protiem, such as Lamb Chop, Chicken Thighs, Pork Belly Strips etc.
Ingredients
- 2 Barnsley Chops
- 1 Red Repper (Chopped)
- 1/2 Corgette (Chopped)
- 10 Button Mushrooms (Quartered)
- 10 Cherry Tomatoes (Halved)
- 1 Medium Onion (Chopped)
- 2 Tablespoons Vegetable Oil for cooking.
Method
Turn on your oven to pre-heat to 200 Degrees Celcius Fan or equivilent.
Chop up all the veg to similar size and place in an oven proof dish. Drisel over the vegetable oil and mix up with your hand to make sure all the veg is coated.

Bake in the oven for the first 15 minutes turning half way through.
Place the Chops or other protein on top and bake until cooked, turning at least once to ensure its cooked on both sides. For Chicken Thighs or Barnsley Chops this can take about 30 to 45 mins, depending on size.
