Ingredients (Per Person)
- 1 Chicken thigh fillet, skinned and boned
- 1 Cumberland Sausage
- 4 rashers Streaky Bacon
- 25g Blue Stilton (optional)
Method
Lay the four rasher of streaky bacon on clean work surface and place the chicken thigh in the middle of the rashers. Skin the sausage and place the sausage filling on the center of the chicken thigh spreading it to both sides.
Wrap the chicken thigh around the sausage meat and wrap the bacon around the chicken thigh. Place in an oven proof dish and chill.
Cook in a preheated oven at 180 Deg C Fan for 40 mins, or until cooked through. I sprinkled a little blue stilton on top about 5 mins before cooking time finished
Serve with some seasonal green and new potatoes.
